star anise

Method

Put the water, stock cube, star anise, coriander seeds, garlic, chilli, ginger and tamari in a saucepan and bring to the boil. Reduce and simmer for 15 minutes to infuse.

Meanwhile, put the rice noodles in a heat proof bowl and cover with boiling water. Steep for 5-10 minutes or until the noodles are soft. Rinse and drain.
