I love the colourfulness of the dish with different tastes combined into one. the serves for 2 were more for three.

To be fair I didn't weigh any of it. Pretty tasty. My wife loved it, I thought it was decent enough. Added some mirin to the sauce to sweeten it and used sweet chilli instead of sriracha as it was all I had.

Made using some frozen stirfry veg mix, mushrooms which needed used up, and scottish greens instead of pak choi. Really versatile and quick.

This was delicious and very filling! Will be making again. I scaled up to 6 portions so I actually did the veggies in the oven then mixed everything in the tray
