Gather your ingredients.

Heat a little olive oil in a pan on medium heat and fry the courgettes for 3-4 minutes on each side until softened and starting to char in places. Toss the garlic through for the last 2 minutes until fragrant. Set aside. You can colour them more than in this picture.
