Notes
I blend the spinach with the eggs and za’atar in a bullet blender (or regular blender) before adding to the pan, for a vibrant green frittata.

Great frittata, but I couldn’t taste the Zataar at all? But the leeks and green veg made it really tasty still. Be sure to put lots of salt in either the egg
I sprinkled it with parmesan before putting it into the oven and swapped the corriander for chopped parsley. Delicious!
Seriously good frittata. Blitzed the spinach with the egg. It came out a most impressive green colour!
