Method

Gather your ingredients and preheat the oven to 200°C (180°C fan).

Each fish fillet will need its own piece of parchment paper. Layer the leeks on one side of each paper and place the fillets on top. Top each with crème fraîche, parsley, dill, a squeeze of lemon, olive oil and a big pinch of salt. Scatter the butter beans around each fillet.
