I couldn’t find the silken tofu in Sainsbury’s or Waitrose so just used cream cheese and mixed it with the soya and water from the pasta. Went down well but not sure if the protein content would have been the same.

Another winner! I hadn't even seen silken tofu before, but using it for the sauce was a revelation! Loved the garlicky mushroom base balanced with the creamy sauce. Definitely a meal I'd be confident to make for friends in future, easy to make yet impressive.
