Method

Preheat the oven to 220°C (200°C fan assisted) and gather your ingredients.

Put the courgette, red pepper, pasta and garlic in a deep baking tray or casserole dish with a pinch of salt. Add the passata and stock and stir through, ensuring the pasta is covered by the liquid. Cover tightly with foil or a lid and bake in the oven for 30 minutes.
