Really tasty, I followed other people’s advice and stuck is some tomato purée.
We all loved this! Used courgette, green beans, red onion, and added a tin of cannellini beans and a big squeeze of tomato purée towards the end.
Couldn't have been easier. I added smoked garlic, green beans, courgettes & sundried tomatoes in place of aubergine.
One of my favourites so far. I added a tablespoon of tomato paste and some nutritional yeast at the end for extra umami. Lush!

Easy to cook and tasted really good
I can’t eat orzo so cooked lentil pasta separately. This meant the sauce was too thin so I might add some coconut yoghurt at the end next time. Still tasty
