Method

Preheat the oven to 200°C (180°C fan) and gather your ingredients.

Put the aubergine, red onion, green pepper, fennel seeds and green beans in a large baking tray with a big pinch of salt. Drizzle with the balsamic vinegar and half of the olive oil, then toss to coat.
