Method

1

Gather and prepare your ingredients. Preheat the oven to 170°C/150°C fan. Line a large baking tray with baking parchment.

2

In a large bowl, mix together the oats, nuts, coconut flakes, seeds, spices and grated carrot.

3

In a small saucepan, combine the honey, peanut butter, vanilla and coconut oil. Place over a gentle low–medium heat and stir until just melted and well mixed.

4

Pour the melted mixture over the dry ingredients and stir until everything is coated.

5

In a small bowl, gently whisk the egg whites until frothy. Pour over the granola mixture and stir to combine.

6

Transfer the granola mixture to the lined baking tray and spread out in an even layer. Sprinkle with a pinch of salt and press everything down with a spatula.

7

Place in the oven for 30–35 minutes until golden and crisp. Leave to cool completely on the baking tray before breaking up into clusters.

8

Stir through the raisins and store in an airtight container.

Flavors are good, but for 8 servings, 30-35 min was insufficient to crisp when all ingredients are on one sheet pan. Needed to stir and bake for 20 minutes longer.

Great recipe! I used maple syrup and substituted some of the oats with buckwheat. Not a fan of the raisins. I added crunchy dried apple pieces instead and it tastes amazing.

The granola came out actually tasting like carrot cake, and I’m happy for that. However, because the raisins are mixed in after the bake, they didn’t combine with the rest of the granola very well. I believe the recipe developer team must have tried other ways before settling on this, so it must be the best way to include raisins, which do burn too easily. Because I’m not that insistent on having raisins in my carrot cake, I think I might leave them out next time.

Easy recipe to make and makes a lot! I cut the recipe in half. Be sure to watch it towards the end of the cooking time as the edges brown quickly. Will be a tasty treat for my road trip.

This is a delicious granola and keeps me full all morning. I’ve made it several times already.

Easy follow recipe and tastes great!

Very nice granola. I misread the oven temperature so had to rescue what I could from some burnt patches. It was still very tasty though so I’m looking forward to making more and cooking it at the correct temperature next time!

Delicious!

Surprised you heated the honey because when you do that you might as well use ordinary sugar. I didn’t bother to make this.

Absolutely delicious. I just cooked my 2nd batch. It makes a very tasty quick snack on the run too.

Really really nice but found the amount of liquid was nowhere near enough for the amount of dried ingredients. I had to half the dry mix to keep for another time. I would half the amount of oats next time and just use 200g. 5 star for taste 3 star for the recipe!

I put less honey and i believe this did not dry it at it should've. but it has a rich flavour and is perfect with yogurt

Absolutely delicious with or without milk. Will be making again, and again!

Another gorgeous recipe - love it!! It really is tasty.
Although the recipe is for 8 portions, I'm going to stick to half the individual amount and just have 40g portions. Adding 100g of Greek yogurt and a handful of blueberries still gives me nearly 20g of protein and under 500 cals.

Delicious as ever
