Straightforward recipe which we are batch cooking for the freezer.
Tamarind paste works so well with aubergine in this recipe.
We will definitely make this again!
I cut the potatoes into tiny pieces but they took so long to cook. It may be better to use pre-cooked potatoes. Tasted delicious though.
I used sweet potatoes as I didn't have new potatoes and it worked very well
Good spice blend generous quantity of sauce added extra veg frozen broad beans and cooked mushrooms for protein.
I have made this recipe many times now and I love it. I love the fact that it is tasty, healthy, straightforward, easy and relatively quick to make. Mostly store cupboards ingredients now that I have already purchased the tamarind paste. I. With health issues one cannot spend hours preparing food so this is one of my βgo toβ recipes.
Given myself a note though not to cut the potatoes and aubergines too large because otherwise they will remain hard. Did this the first time I made this.
