Really loved the flavours.
I subbed the kale with spinach.
After reading the reviews I decided to chop the aubergine and potatoes smaller than stated, they still took along time to cook, I had to add a little more stock so it wouldn’t get too dry.
I’ll definitely make it again as it was very tasty. I’ll just precook the potatoes or use sweet potatoes. Thank you team! 😋😋😋

Straightforward recipe which we are batch cooking for the freezer.
Tamarind paste works so well with aubergine in this recipe.
We will definitely make this again!

I cut the potatoes into tiny pieces but they took so long to cook. It may be better to use pre-cooked potatoes. Tasted delicious though.

I have made this recipe many times now and I love it. I love the fact that it is tasty, healthy, straightforward, easy and relatively quick to make. Mostly store cupboards ingredients now that I have already purchased the tamarind paste. I. With health issues one cannot spend hours preparing food so this is one of my ‘go to’ recipes.

Given myself a note though not to cut the potatoes and aubergines too large because otherwise they will remain hard. Did this the first time I made this.
