2 x 175g skinless fillets - cod or haddock
finely chopped
oregano (dried)
thyme (dried)
red chilli flakes
breadcrumbs
plus extra for drizzling
peas (frozen)

finely sliced approx 1 x red cabbage
or sugar
water
boiling water

Method

1. Preheat the oven to 200°C/180°C fan/gas 6.

2. Begin by making the pickled cabbage. Put the cabbage in a large bowl. Mix the vinegar with the fennel seeds and honey or sugar and season. Add the boiling water, pour the mixture over the cabbage and toss to combine. Set aside for 30 minutes.
