Method

Gather your ingredients. Heat the olive oil in a large pan. Add the onion and red pepper and cook for 8 minutes, or until softened and slightly coloured.

Add the mushrooms and cook for a further 5 minutes until the mushrooms have released their liquid. Then, stir through seasoning and cook for 5 minutes until fully combined and the mushrooms have slightly charred and become smoky.
