Doctor's Kitchen Giardiniera

This is our take on giardiniera - an Italian mixed pickle. Traditional giardiniera is made using bite-sized pieces of vegetables. We like the Chicago-...style alternative, where all the vegetables are finely chopped so the resulting pickle is like a relish.
