Gather and prepare your ingredients.
Heat the oil in a saucepan over medium heat. Add the onion, garlic, and ginger, and cook for 3–4 minutes, until softened.
Add the coriander and turmeric, stirring for 1–2 minutes until fragrant.
Add the lentils, carrot, and yellow pepper, stirring to coat in the spices. Add the vegetable stock and bring to a simmer. Cook for about 15 minutes, until the vegetables and lentils are soft.
