Method

Gather and prepare your ingredients. To quickly defrost your peas and edamame place them in a sieve and run under a warm tap. Shake off excess water.

Place all ingredients into a small blender and blend until smooth.

Heat a drizzle of olive oil in a frying pan over medium-high heat. Add spoonfuls of batter and cook for 3-4 minutes on each side, until fully cooked. Allow to cool before serving. We used a tablespoon measure to ensure even fritters.
