Method

Gather and prepare your ingredients. Preheat the oven to 200°C/180°C fan.

Squeeze the excess liquid from the grated courgette and onion. If you have a muslin bag you can use this, of not simply use your hands or press it into a fine sieve.

Place the courgette, onion, and all other ingredients into a bowl and stir to combine.

Shape into balls about the size of a golf ball, or weighing about 25g each.

Bake for 10 minutes, until darkened and firm. If in doubt, cut one open to make sure the flesh is no longer pink.
